Restaurant style Mix vegetable

This is my mom's recipe. Easy to make, simple and has so many veggies. And trust me you will love this mix vegetable as much as we do. For people like me who does not loves too many vegetables...can polish off this in seconds :) And like I always say.. homemade cooking gives you control on quality of ingredients and hygiene.

So lets get started!!

Ingredients

Vegetables: Carrots, Cauliflower, Beans, Mushroom (100 gms each) Capsicum (1 medium size)
Onion : 3 medium size finely chopped
Tomatoes : 2 medium size 

Melon Seeds : 1 tsp
Poppy seeds : 1 tsp
Cashews : 10
Raisins : 5   

Al these soaked and made into a paste (in case you dont have poppy seeds or melon seeds you can make it with cashews and raisins as well , in that case just increase the number of cashews proportionally)

1 tsp ginger paste 

1 tsp garlic paste 

Whole spices

2 bay leaf
1 cinnamon stick
4 green cardamom
4 cloves
1 tsp Jeera / Cumin
2 dry red chillies



Powder spices

1tsp coriander powder
1tsp cumin powder
½ tsp turmeric
½ tsp red chilly
¼ tsp garam masala 

Salt as per taste 
1/2 tsp kasuri methi (optional and not in picture )

Procedure :

Heat pan and add oil , once the oil is smoking hot add the whole spices , let the onions get cooked completely till the turn golden brown.This is the most important step if your onions dont get cooked properly in low heat the whole taste of the recipe will be altered.
Cook the onions on low flame for about 10 minutes.

While your onions are getting cooked (on low flame, dont forget to stir them in frequent intervals) get the spice paste ready. Add the ginger, garlic and all the powder spices with 2 tablespoon of water. You will always find bengalis making the paste of all the dry powder spices , the reason is to avoid burning of the spices and also ensures proper cooking while they release their flavours.

By now your onions would have cooked properly, now you can add in the above spice mix, once you feel the spice mix is cooked add in the tomatoes and salt . Again cook everything very well till oil separates.

After your entire masala has cooked very nicely and you see beautiful color and oil separating you can add in the veggies. make sure now you turn your flame to the highest. Add the cauliflowers and carrots first after you cook them for a minute add in the beans and mushroom. keep Stiring, now after 3-4 minutes add the capsicum . Now simmer the flame and let the veggies cook for another 5 minutes After 5 minutes you can add the cashew paste mix and add around half cup of water and let it simmer for another 5 minutes.  Check for seasoning also if you feel your veggies have not cooked properly you can let it simmer for couple of more minutes. However do remember the veggies should not be soggy. Add in the crushed kasuri methi if you wish to and your mix vegetable is ready to serve.
